Last-Minute Grilled Dishes for Your Barbecue Party

Planning a barbecue party can be overwhelming especially if it's your first time being the host. The most important step is to list down the different dishes you'll be cooking on the grill to serve your guests. No worries - just remember that it's ideal to opt for recipes that are easy to prepare but will satisfy everyone - kids and adults alike.
Cheesy Garlic Grilled Zucchini
What you need:
  • 3 pieces zucchini
  • 2 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese
  • 3 tablespoons butter, softened
  • 1 tablespoon chopped parsley
Slice each zucchini in half (crosswise) then slice each half (lengthwise) into 3 slices. In a small bowl, combine the garlic, butter and parsley. Spread the mixture on both sides of each slice of zucchini. Sprinkle cheese on one side of each slice and place slices cheese-side up and crosswise on a pre-heated grill. Cook over medium-high heat for 6 to 8 minutes or until cheese has melted and zucchini is cooked through.
Peanut Butter Grilled Chicken
What you need:
  • 4 boneless, skinless chicken breast halves
  • 1 clove garlic, chopped
  • 2 tablespoons low-fat peanut butter
  • 1 tablespoon lime juice
  • 2 teaspoons soy sauce
  • 1/3 teaspoon curry powder
  • Dash of ground cayenne pepper
Mix together garlic, peanut butter, lime juice, soy sauce, curry powder and cayenne pepper in a medium bowl. Stir to combine ingredients well. Place chicken breast halves on a pre-heated grill and brush top half with half of the sauce. Cook over high heat for 6 to 8 minutes. Flip chicken then brush with the remaining half of the sauce. Grill for another 6 to 8 minutes until cooked through.
Easy Butter Garlic Grilled Shrimp
What you need:
  • 1 kilogram large shrimp, peeled and deveined
  • 1/4 cup olive oil
  • 6 tablespoons unsalted butter
  • 2 tablespoons minced chives
  • 1 tablespoons minced shallots
  • 1 tablespoon minced garlic
  • 1/2 teaspoon paprika
  • Salt and ground black pepper to taste
Combine olive oil, butter, chives, shallots, garlic, paprika, salt and pepper in a large bowl. Stir to mix ingredients well. Place shrimps in the bowl and toss to coat fully with marinade. Cover and refrigerate for at least 1 hour. When ready, remove from marinade and cook on a pre-heated grill over high heat until cooked through and opaque, about 2 to 3 minutes.
