3 Amazing Grill Recipes in Less Than 60 Minutes

A backyard barbecue is a lot of fun, but it is also a lot of work. When you're pressed for time getting all grilled dishes ready in time for the arrival of your guests, there are some go-to barbecue recipes you can try - nobody will suspect they were prepared in under an hour!
Here are 3 quick and easy grill recipes ready in less than 60 minutes:
Quick Grilled Salmon Linguine
Prep Time: 50 minutes
What you need:
  • 1 piece 1-inch thick salmon steak
  • 1/2 lemon, sliced
  • 1 1/2 cup linguine pasta
  • 1/2 cup chopped yellow bell pepper
  • 1/4 cup diced onion
  • 6 tablespoons skim milk
  • 2 tablespoons extra-virgin olive oil
  • 2 tablespoons butter
  • 1 tablespoon reduced fat cream cheese
  • 1 teaspoon chopped fresh dill
  • 1 small pinch salt and pepper
Season salmon steak with salt and pepper and cook in a pre-heated grill over medium-high heat for 3 minutes per side. Flake cooked salmon into bite-size pieces and set aside. Bring a large pot of water to a boil and cook pasta until al dente, about 10 minutes. Transfer pasta to a large bowl. Heat butter in a saucepan over medium-low heat and cook yellow bell pepper and onion until softened. Add milk and cream cheese to the pan and simmer for 3 minutes. Pour sauce over linguine and add grilled salmon to the mixture. Toss to coat then top with lemon slices and dill.
Grilled Sausage Salad
Prep Time: 45 minutes
What you need:
  • 1 large onion, sliced
  • 1/2 kilogram smoked sausage, sliced into 1-inch pieces
  • 1/4 kilogram green beans, trimmed and halved
  • 1 1/2 cups quartered red potatoes
  • 1/3 cup water
  • 1 teaspoon vegetable oil
  • 1 teaspoon butter
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
Mix together onion, sausage, green beans and potatoes in a large sheet of heavy duty foil. Sprinkle with oil, season with salt and pepper and top with butter. Fold the foil to create a packet and to enclose ingredients, leaving only a small opening. Carefully pour water into the opening then seal tightly. Cook packet in a pre-heated grill over high heat, turning once, until sausage is brown and vegetables are tender, about 20 minutes.
Cheesy Garlic Grilled Zucchini
Prep Time: 20 minutes
What you need:
  • 3 pieces zucchini, halved crosswise
  • 2 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese
  • 3 tablespoons butter
  • 1 tablespoon chopped fresh parsley
Slice each zucchini half into 3 pieces then set aside. In a small bowl, combine garlic, butter and parsley then spread the mixture on both sides of each zucchini piece. Sprinkle one side of each zucchini with Parmesan cheese. Place zucchini crosswise in a pre-heated grill over medium-high heat for 8 minutes or until cooked through and cheese has melted.
