Salmon a La Mint
What you need:
  • 4 salmon fillets
  • 1 bunch fresh mint, stems removed
  • 1 bunch flat-leaf parsley, stems removed
  • 1 lemon, thinly sliced
  • 4 cloves garlic, peeled
  • 1/2 cup lemon juice
  • 2 tbsps. olive oil
  • 2 tbsps. melted butter
  • 2 tbsps. honey
  • 4 tsps. kosher salt
  • 1 tsp. ground black pepper
  • Mint sprigs for garnish
Arrange the salmon fillets in a flat dish. Set aside. Combine mint leaves, parsley leaves, garlic, lemon juice, olive oil, honey, salt and pepper in a blender and process until the mixture becomes a smooth paste. Coat the salmon with the paste and marinate for 10 minutes. When ready, remove the fish from the marinade and discard any excess. Cook the fillets in a pre-heated grill over medium-high heat for 3 minutes per side or until cooked through. Brush the salmon with melted butter and top with lemon slices and mint sprigs before serving.
Mint and Thyme Chicken Pasta
What you need:
  • 2 cups whole-wheat spaghetti, cooked
  • 1/2 kg. boneless and skinless chicken thighs, cut into strips and cooked
  • 1/2 cup chicken stock
  • 1/2 cup dry white wine
  • 1 1/2 cups heavy cream
  • 1 1/2 tbsps. chopped fresh mint
  • 1 1/2 tbps. chopped fresh thyme
  • 1 tbsp. olive oil
  • 2 tsps. honey
  • 1 tsp. lemon zest
  • 1 tsp. sherry vinegar
  • 1/2 tsp. salt
  • Black pepper to taste
Heat olive oil in a skillet over medium-high heat. Add chicken stock and white wine and cook until the volume reduces to half. Stir in mint, thyme, lemon zest, heavy cream, honey and salt and cook until the mixture reduces in half again. Add cooked chicken and pasta. Mix to coat and cook for 3-5 minutes. Season with salt and pepper before serving.
Mint Tomato Pork Strips
What you need:
  • 4 boneless pork loin chops, cut into strips and cooked
  • 2 tomatoes, chopped
  • 2/3 cup extra-virgin olive oil
  • 1/3 cup chopped fresh mint
  • 1/4 cup white wine vinegar
  • 2 tsps. Dijon mustard
  • 1 tsp. salt
  • 1/2 tsp. white sugar
  • Ground black pepper to taste
Place cooked pork in a flat dish. Set aside. In a medium bowl, combine olive oil, vinegar, Dijon mustard, salt, sugar and black pepper. Mix until ingredients are well-blended. Add tomatoes and mint. Pour mixture over cooked pork and serve.
